• 1/2 cup natural/unsweetened flaked coconut  
  • 1/2 cup raw flaked almonds
  • 1/2 cup raw pepitas/pumpkin seeds
  • 1 tblsp vanilla be. Health collagen
  • 1/4 tsp sea salt
  • 1/4 cup organic maple syrup or honey
  • 1 large organic egg


  • 1 cup dark chocolate chips
  • 1 tsp coconut oil (optional)



  1. Heat oven to 175 degrees Celsius.
  2. Make the base by combining all the base ingredients in a bowl. 
  3. Place small mounds of mixture onto a parchment lined baking tray not too close together to allow Florentine base to spread. (Tip: don't overload the mounds with too much liquid to avoid them running). 
  4. Bake for 12-15 minutes until the Florentine base has browned.
  5. Allow to cool on a rack for at least 15 minutes.
  6. To make the chocolate coating, heat the chocolate and the coconut oil the microwave at 40 sec intervals until melted. You want it to be a little thicker to make it easy to coat the Florentines.
  7. Using a small spatula, coat the bottom of the Florentines and place in the fridge to set. 
  8. Use up any leftover chocolate by drizzling over the top. 
  9. Store in the fridge in an airtight container.
