Ingredients
- 1/2 cup natural/unsweetened flaked coconut
- 1/2 cup raw flaked almonds
- 1/2 cup raw pepitas/pumpkin seeds
- 1 tblsp vanilla be. Health collagen
- 1/4 tsp sea salt
- 1/4 cup organic maple syrup or honey
- 1 large organic egg
Coating
- 1 cup dark chocolate chips
- 1 tsp coconut oil (optional)
Method
- Heat oven to 175 degrees Celsius.
- Make the base by combining all the base ingredients in a bowl.
- Place small mounds of mixture onto a parchment lined baking tray not too close together to allow Florentine base to spread. (Tip: don't overload the mounds with too much liquid to avoid them running).
- Bake for 12-15 minutes until the Florentine base has browned.
- Allow to cool on a rack for at least 15 minutes.
- To make the chocolate coating, heat the chocolate and the coconut oil the microwave at 40 sec intervals until melted. You want it to be a little thicker to make it easy to coat the Florentines.
- Using a small spatula, coat the bottom of the Florentines and place in the fridge to set.
- Use up any leftover chocolate by drizzling over the top.
- Store in the fridge in an airtight container.
