This is my tried & tested dinner party dessert that I have been rolling out for years. It has that lovely combo of fresh sweet strawberries macerated in coconut sugar and balsamic vinegar to give them a lovely caramelised taste. Served with coconut yoghurt in a flashy glass will have your guests swooning with satisfaction. Fresh, healthy & packed with nutrition.  Gluten & dairy free.  Serves 4. 

Ingredients

2 Punnets of strawberries, stems removed and quartered.
7 Tbs of coconut sugar
1/2 Cup balsamic vinegar
2 Cups plain coconut yoghurt (or dairy yoghurt of choice)
10gm Vanilla or Pure be. Health collagen
Fresh Mint (optional)
1 Cup pan roasted walnuts & almonds chopped (optional)

 Method

  1. Sprinkle the quartered strawberries with coconut sugar and stir to coat. 
  2. Add the balsamic vinegar to strawberries & again stir to coat and mix with the coconut sugar. Put aside in the fridge to macerate (soak) for 2 hours
  3. Mix the yoghurt with be. Health collagen. This can be done at the same time as the strawberries and placed in the fridge or at the time of serving. 
  4. In 4 large glasses place a layer of strawberries, then follow with a layer of yoghurt. Layer 1 more time each or until the mixtures run out finishing with a healthy dollop of yoghurt on top.
  5. Sprinkle with nuts then top with a few leaves of fresh mint.
