  • 2 tbsps. olive oil
  • 1 tbsp. turmeric
  • 1/2 tsp. paprika
  • 1/2 tsp. cumin
  • 4 garlic cloves, minced
  • 1/4 cup sweet onion, chopped
  • 1 small celery stick chopped
  • 1 large carrot, peeled and chopped
  • 1 tbsp. fresh ginger, grated
  • 4- 6 cups vegetable stock depending on consistency you want

  • 1 head of cauliflower, stem removed, cut into florets (about 4-5 cups)
  • 1 cup chickpeas, drained and rinsed (reserve 1/4 cup and fry until crispy)
  • 1/2 of a lemon, juiced
  • Fresh thyme fried


  1. Heat 2 tbsps. olive oil in a large Dutch oven or pot over medium heat.
  2. Add the garlic and sauté for 1 minute. Add the onions, celery, carrots and fresh ginger and continue to sauté for 2 minutes.
  3. Add in the turmeric, paprika, cumin, and a dash of salt and pepper. Stir for another minute until the spices are fragrant.
  4. Add in the cauliflower and sauté for about 8 minutes.
  5. Pour in 4 cups stock and simmer until the cauliflower is soft. Add in the chickpeas and Pure be. Health Collagen and simmer for another 2 minutes.
  6. Working in batches puree the soup in a blender or you can use a handheld blender to blend the soup into a creamy consistency.
  7. Pour the soup back into the pot and stir in the lemon juice. If you think the soup is too thick you can add in additional broth and simmer until warmed through.
  8. Serve the soup with fresh fried thyme and crispy chickpeas. 
  9. Store the leftovers in an airtight container in the fridge for up to 4 days or freeze for up to two months.
