Jaq's Snaqs: be. Pure Collagen Peanut Butter Protein Slice

I discovered Reese's Pieces peanut butter cups in the late 90s......this was not a good thing.

While the combination of chocolate and PB has not been messed with, this pimped up Peanut Butter Protein Slice now incorporates added protein from be. Health to help build muscle and repair tissue. This slice will also keep you feeling fuller for longer. Try it as a dreamy after-dinner supper with a cup of herbal tea, for a peanut butter drizzled slumber. *Note: not suitable for nut allergies.

Ingredients

  1. 1 1/2 cups smooth peanut butter (*see product suggestion below)

    be. Health Collagen Jaqs Snaqs Peanut Butter Protein Bars
  2. 1/2 cup honey (or coconut palm syrup, if vegan)

  3. 2 tablespoons melted coconut oil

  4. 2 teaspoons vanilla

  5. 2/3 cup ground flaxseed meal

  6. 1 cup of be. Pure Collagen powder

  7. 250g dark chocolate bar (add 1 tablespoon of coconut oil to dark chocolate while melting)

  8. Coarse sea salt for sprinkling on top

 

Method

  1. In a medium bowl mix together peanut butter, honey, coconut oil and vanilla until smooth. Add in ground flaxseed meal and be. Health collagen powder of choice. Use a spoon to mix together until you can’t anymore, then use clean hands to help work together. The batter should be similar to cookie dough.

  2. Press into a square or rectangular slice pan lined with parchment paper.

  3. Make the chocolate layer by breaking up the dark chocolate into a small saucepan with 1 tablespoon of coconut oil and melting until completely smooth. Pour the melted chocolate over the peanut butter layer and tilt the pan so that the chocolate covers the peanut butter layer entirely.

  4. Place in the fridge for 30 minutes - 1 hour before slicing into bars or squares (of choice). Store covered in the fridge until ready to eat. Bars will keep for up to two weeks but likely to only last for two days based on who's home.

*I prefer to use Mayver's Smooth Peanut Butter as they are Aussie Made & Owned. They don't use preservatives, sugar, hardened fats, gluten, dairy or palm oil in any of their products which I love.
